Most PHP mailer classes can do that.

This class can send messages with any headers you need, as well attach files, have text and HTML alternative parts, embed images and CSS in HTML messages, etc..

It comes with sub-classes that can send messages using the mail function, or via a SMTP server, sendmail or qmail programs.
